Blueberry Crumble Bars

If your looking for an easy bake, these Blueberry Crumble Bars are it! Nothing fancy, just a basic crumble with your favorite fruit filling. I used blueberries because I had some in the fridge I needed to use up but you can easily use raspberries, blackberries or even apples in this.

Start by preheating your oven to 350F. Then line an 8×8 baking pan with parchment paper. Tip: if you give the pan a light spray with oil or whatever cooking spray you have on hand, it helps the parchment lay flat in the pan.

Let’s start with the crumble. Whisk together the flour, baking powder and salt in a large bowl and set aside. In a separate large bowl, whisk together the melted butter, sugar, and vanilla. Add the wet ingredients to the dry and mix until it has a crumbly texture.


Now lets prep the blueberries. Place the berries in a bowl, add the sugar, corn starch and lemon juice and stir gently until they are fully coated. You don’t need to mush the berries. As they bake and get soft, the corn starch will act as a thickener to help your bars stay together.


Now lets assemble! Place half the crumble mixture in the bottom of the lined baking pan and press it down. Then add the blueberry filling, spreading it out evenly. Then top with the remaining crumble, giving it a pat just to stick everything together. That’s it, you’re ready to bake!!



Give it 35-40 minutes in your 350F oven, until the top is golden brown. Let it cool in the pan, on a wire rack completely before you cut it into squares. These will keep in a airtight container for 4-5 days.
